So about 4 days ago I started out to make a coupon module for the Ubercart ecommerce module. So far so good, I have some screen shots to show of the administrative interface that I have completed. I'm yet to add the functionality of limiting the coupons to only certain users or roles. My hope is to release that functionality in a second release after the initial framework has been completed.
Check out the screen shots and let me know what you think, I'd love to get some feed back on usability and feature requests. As you can see I have it tied in to automatically make use of the jscalendars module.

Oh! Something I just thought
Oh! Something I just thought about also, would be a purchase minimum for a coupon to be used. So you can offer customers purchasing over $100 in product to use a coupon, etc.
